When training someone's horse, is there any legal requirements? Insurance etc. Any information would be greately appreciated as I am going to start training but geting information off the internet is not easy. Thanks

Yes you definitely need insurance, even if the people whose horses you are training are friends/friendly. Unfortunately, if something goes wrong it's amazing how quickly things can turn and become nasty. Will you be travelling to the yard where the horse is kept or will you be keeping them at yours? Apart from insuring yourself for liability also when you're self employed it's worth insuring yourself for injury, but this all depends on your personal set up. Maybe not being able to work because of injury wouldn't financially be a problem for you. Take a look at the link and scroll down-this company do good policies for all different equestrian businesses, so worth giving them a call.
