We use poles on either side of a single jump so it rides like a triple bounce to teach most of the ex racers to jump slowly and collected (they often bound in and throw themselves through them) it really makes them bounce over the jump but you don't have to worry about extra fences. its also good for striding reasons because it stops a horse taking off early or late. :)
