Havn't read many comments but i view canter poles as jumps and try to alter the horses stride as i would for a jump so we meet the pole on the correct number of strides. I don't expect the horse i am riding to treat the poles as jumps as we would be jumping over the poles but i try to get the correct striding each time by pushing on or collecting even more just like on a jumping course...

For the striding it depends on the horse one stride for a lanky TB could be 2 strides for a small pony. For grenville (16.2 TB) i pace 4 normal steps between the poles for canter and 3 feet in front of each other (toe to heel) for trotting. It is just trial and error to see what works for your horse.

its common to do 3 feet in front of each other like jess said for trotting poles, and 3 steps or 9 feet for cantering poles.
